gnu: python-latexcodec: Update to 3.0.1.
* gnu/packages/python-xyz.scm (python-latexcodec): Update to 3.0.1.
[source]: Switch to git-fetch.
[build-system]: Switch to pyproject-build-system.
[propagated-inputs]: Remove python-six.
[native-inputs]: Add python-pytest, python-setuptools.
