* gnu/packages/xml.scm (python-untangle): Update to 1.2.1-2.7eec044.
[build-system]: Use pyproject.
[arguments]: Dropp them.
[propagated-inputs]: Add python-defusedxml.
[native-inputs]: Add python-poetry-core and python-pytest.
