gnu: python-mkdocs: Switch to pyproject.
* gnu/packages/python-xyz.scm (python-mkdocs):
[build-system]: Switch to pyproject-build-system.
[arguments]: Set <#:test-backend> and <#:test-flags>.
<#:phases>: Remove 'check phase replacement.
[native-inputs]: Add python-setuptools.
