gnu: buku: Update to 5.1.
* gnu/packages/web.scm (buku): Update to 5.1.
[source]: Switch to git-fetch.
[build-system]: Switch to pyproject-build-system.
[arguments]<#:tests?>: Enable them.
<#:test-flags>: Ignore failing tests.
[native-inputs]: Add python-pyyaml, python-pytest, python-setuptools.
